Lettuce is the staple food of lions in Southern Chinese Lion Dancing. Lettuce in Cantonese is ‘Sang Coi’ which literally means ‘raw vegetables'. The word ‘sang’ can also mean 'to create'. By changing the tone of ‘coi', we get ‘wealth'. As such, lettuce sounds like ‘to get rich’ or ‘to create wealth’ and the Chinese regard the lion as a symbol of good luck.
